Bird's nest soup

A choice viand in China is bird’s nest soup. These nests are not built out of sticks or twigs, but the saliva of the Swift, which becomes rubbery and gelatinous as it dries. The nest has been used in traditional Chinese cooking and medicine for centuries. Recently, the price has skyrocketed from about $10 USD per kilogram in 1975 to $1,600 USD in 2002.
